If you live in the US, nothing changes on your iPhone today. The China rollout shows that Apple's AI features are decided country by country, and that Siri AI has no timeline in markets with tougher rules.
According to MacRumors, the launch covers a basic set of Apple Intelligence tools.

Based on the network access permits Apple received, MacRumors says the devices covered include the iPhone Duo, the iPhone 18 Pro and earlier iPhones.
Siri AI is also unavailable in the European Union on iPhone, iPad and Apple Watch, according to GSMArena.
The case shows a pattern: Apple adapts the product to what each government allows, with different partners in each region.
